Asian Chicken Noodle Meatball Soup
Ingredients:
1 x Chicken frame
2 chicken cube
1 beef cube
Water
Peppercorns
Star anise
Cinnamon stick
Spring onion
Garlic whole bulb sliced in the middle
4cm knib of ginger cut in half
Brown onion - sliced in half
Meatballs
Chicken mince
Spring onions
Ginger
Coriander stalks finely cut
Braggs soy sauce
Veggies for Broth
Green cabbage
Asparagus
Spring onion
Onion slices
Basil
Coriander
Fresh chili
Konjac noodles
Squeeze of lime
Directions:
To make Broth - In a pan on medium heat, Fry the garlic, onion and spices until the onion is translucent. Add the rest of the ingredients, Bring to the boil then reduce to simmer for 3-4hrs
To make Meatballs - Mix ingredients well and make your meat balls.
Add meatballs to broth 20 mins before it's finished cooking. Add extra veggies 5 minutes before it's finished and ENJOY!!!!!
