BEEF VINDALOO

Ingredients:

1/2 tsp crushed garlic
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp cinnamon
1/2 tsp garlic
1/2 cup beef stock
1 small onion
Handful of spinach
Konjac Rice
1/2 tsp yogurt
Coriander to season

Method:

Chop 100g of beef into small pieces and 1/2 tsp each of turmeric, garam masala, paprika, cumin, cinnamon, & garlic powder and mix well.
In a hot pan with a spray of olive oil fry until juices of meat appears turn down the heat, add 1/2 cup beef stock and onion wedges, simmer for 5-10 mins.
Add crushed ginger and garlic, stir for 2 mins and serve on a bed of spinach or konjac rice or with a nice crisp crunchy salad.
Top with 1/2 tsp yogurt & coriander.
