Cold Asparagus Salad
3 tablespoons lemon juice
Fresh chopped mint leaves or parsley
2 tablespoons caper juice
1 tablespoon finely minced red onion
Salt and pepper to taste
Lightly steam the asparagus until tender. Marinate in juices and spices for at least 30 minutes and enjoy. Variations: Toss with the marinade of your choice for flavour variety. Makes one serving (1vegetable) Phase 3 modifications: Add olive oil or drizzle with melted butter.
