1 onion, sliced
2 cloves garlic, minced
2 large carrots, peeled & diced
2 large sweet potatoes, peeled & diced
1 (15 oz can) garbanozo beans, drained
2 lbs skinless, boneless chicken breasts, cut into 2-in pieces
1/2 tsp ground cumin
1/2 tsp ground turmeric
1/4 tsp ground cinnamon
1/2 tsp ground black pepper
1 tsp dried parsley
1 tsp salt
1 (14.5 oz can) diced tomatoes (driain for a less soupy finish)
Place onion, garlic, carrots, sweet potatoes, garbanzo beans, & chicken in slow cooker. In a bowl mix all spices. Sprinkle spices over chicken/vegetables. Pour in tomatoes and stir to combine.
Cover cooker, set to high and cook until potatoes are tender and the sauce has thickened 4-5 hours.
