Spinach and Feta Tart


1 egg
1 egg white
Handful chopped wilted spinach
1 tbsp of crumbled feta
1 tsp garlic
mixed herbs
25g chick pea
tbsp soda water


Mix chickpea flour with a small amount of soda water. It should be the consistency of cookie dough. Using the back of a wet spoon mold into the small pie tin. Blind bake this crust on medium heat until it comes away from the tin. Ensuring you line your tin.

Mix egg white, spinach, feta, garlic, and herbs in a bowl. Pour into base and cook in the oven until golden on top and all egg is cooked through.
