Vietnamese Noodle Soup

Ingredients:

15L of water
3 garlic cloves minced
3cm of fresh ginger grated
1/2 packet Konjac noodles
1/4 tsp dried chili flakes
1-star anise optional
1 stock cube
2 tbsp ACV
4 tbsp tamari soy sauce
1 bunch Bok Choy
1 c cabbage
2 tbsp Coriander
100g of protein (prawns, tofu, chicken, or beef)


Method:

Bring water to a boil in a large pot. Once boiled add soy, acv, and stock cube. Reduce to medium heat
Soften cabbage in a frypan with a tad of water until soft and cooked. Add garlic, ginger, and stir for approx. 2 mins.
Add cabbage mixture to the boiling water. Along with bok choy, star anise, and chili
Add protein and noodles (cooking time will depend on the protein of choice)
Serve in a big bowl and top with fresh coriander
